As the name suggests!
1. Cut a watermelon into half. Using a melon baller, scoop out the insides and carefully place them on a plate.
2. Cube fresh feta.
3. Julienne fresh mint and basil.
4. Dressing: 2 tablespoons of fresh watermelon juice, 1 tablespoon of fresh lime juice, 3 tablespoons of extra-virgin olive oil, roasted cumin powder, a pinch or two of red chili flakes, and ½ teaspoon of dry mango powder, salt to taste and freshly ground black pepper. Whisk them all together.
5. In a big bowl, mix the melon balls and feta and a handful of toasted and cooled pine nuts. Pour the dressing over the fruit and cheese and scoop it into the watermelon halves which can now serve as your bowls!
6. Serve cold!
