INGREDIENTS
Fresh Cranberries, 4 Oranges, Cumin seeds, Freshly squeezed lemon Juice.
RECIPE
1. Squeeze out the juice of the oranges. Cut up the peel into big chunks and blend to make a coarse paste. Keep aside in a separate bowl and add some lemon juice to it.
2. Measure the quantity of juice from the oranges. Mix equal part of sugar in it and boil in a heavy bottomed pan to make a thick syrup till the sugar completely dissolves.
3. In a big pan, add one packet of fresh cranberries. Cover and cook on medium heat till the cranberries break down completely and become mushy. With a big spoon, mash them up completely.
4. Add the ground orange peel to it and the syrup.
5. Add salt to taste and half a teaspoon of paprika.
6. Allow the mixture to cook down and starts to get the appearance of a jam.
7. Roast a teaspoon of cumin in a pan and grind it to a fine powder. Add this to the cranberry orange relish and mix well.
8. Allow this to cool completely before bottling. Keep it refrigerated.
