SUMMER FLAVORS SALADS SOIREE….continues…now with Fruits!


If any of you are thinking that veggies are the only thing in abundance over the summer months, you are wrong! The divine fruits!! Blackberries, Strawberries, Blueberries, Peaches, Apricots, Cherries,  and my absolute favorite: Raspberries!!

So, how can one not celebrate these gorgeous things?? Here are two more salads that elevate the fruits of the season to another level altogether!  I used Buffala Mozzarella to offset the sweetness of the fruits in both these salads, one with apricots and peaches and the other with strawberries! The simplicity of these beautiful no-cook salads will blow your mind and give you time with your guests to relax and enjoy!

  • 2 Golden Peaches
  • 2 Apricots
  • 2 Tomatoes
  • 20 fresh Basil Leaves
  • 8 oz fresh Buffala Mozzarella
  • 1/2 Lime


  1. Wash the Basil leaves and arrange them on a platter. Season them with some salt, freshly ground black pepper and some olive oil

  2. Cut chunks of the Buffala Mozzarella and place them on the basil leaves

  3. Quarter the tomatoes and place them next to the basil leaves

  4. Quarter the peaches and apricots and arrange them on the platter

  5. Sprinkle some salt and some freshly ground black pepper on the platter

  6. Squeeze the juice of half a lime on all the fruits and cheese

  7. Finally, drizzle generously with EVOO!! And get your forks ready!!
