
Anyone says parathas and I am in!! Give me a good karari paratha with a spicy achar on the side and a dollop of dahi and I will be yours forever!! And if it is a stuffed khasta paratha, then I could be persuaded to do many things that I wouldn’t otherwise do 🙂 like laundry! BUT: With all the health talk that is relentlessly on, some of us mere mortals have to rethink our obsessions with things like parathas! And I am doing my bit to be mindful of protein, fibre, water intake, etc etc etc. But the heart wants what it wants….So, I decided to go around the issue and do something that I had not done before. So, one item that regular features on our plates is tofu bhurji. For some inexplicable reason, I am off paneer! Sacrilige for an ardent paneer lover, I know! I don’t get it too!! So it’s tofu all the way for me. So it appears in bhurji form pretty regularly with onions/tomatoes/peppers/broccoli, etc etc. Here is one version of it which I had posted earlier. I had some left over. So out came the aata. and In went the bhurji. Stuffed to the gills with the tofu bhurji, this crisp paratha was a treat that came with no side of guilt! Instead the sides comprised a bowl of yummy daal makhani and some lightly sauteed cauliflower (this one was sans the edamame though) and a fresh salad, this was truly a memorable and satiating meal!
